My name is Sarah, and I have celiac disease.

What I once thought was just an intolerance to gluten, has now been confirmed actual celiac.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
As in, gluten is a poison to my body. ☠️
⠀⠀⠀⠀⠀⠀⠀⠀⠀
It’s a blessing and a curse.

A new normal.

A grieving for what I “thought” was a dietary choice.

Looking back over the last 15 years, I’ve had terrible digestion issues that I just thought were IBS, or food allergies.

NOPE.

The blessing: I know a little more about what’s wrong with how my body handles food.
The curse: Eating anywhere but my home is going to be tricky and weird and not fun.

I’m not quite sure what this combo does in the oven.. but it’s pretty dang delicious. 🍕 🍗

As a striving to be low carb-er, I eat it just as is, but it would be insane sliced up over some warm pasta, drizzled with the pan sauce for those that do the carbs. Check out the video posted for the steps, but you just slap this together, pop in the oven at 400° for 30 minutes, and you’re good to go! 🙌🏻

Do note: you want to use actual pizza sauce because it’s thicker, and will stay mostly in place while cooking.. this helps keep the chicken breast nice and juicy. 🍅 🍅
